Tajima is located in the northern part of Hyogo prefecture.Venison purchased directly from the hunter there.The chef himself went to Tajima to talk to him directly, and he touched the personality of the hunter and made a special ingredient.Slowly roasted and finished with straw to give it a strong aroma, the sauce is finished with deer bone broth and red wine.
